SAAR, meaning the “essence of something,” is a modern Indian bistro in midtown Manhattan helmed by celebrated Tandoor Master Chef Hemant Mathur and his wife, Chef Surbhi Sahni. The 64-seat restaurant and bar showcases authentic regional comfort food in a cozy, eclectic setting inspired by Chef Mathur’s home city of Jaipur.
